Jewel's Oven-Fried Cinnamon Chicken

2lbs chicken, cut up (or 4 B/S breasts)
1/2 cup flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp turmeric
1/2 tsp black pepper
1 egg
2 TBS milk
1/2 cup breadcrumbs
2 TBS vegetable oil

Heat oven to 375 degrees. Combine flour, salt, cinnamon, turmeric and black pepper, set aside. Beat egg and milk. Coat chicken pieces with flour mixture, then add breadcrumbs to remaining flour mixture. Dip chicken pieces into egg, then coat with crumbs. Arrange in roasting pan. Sprinkle with oil, then bake until crisp and brown, about 40 minutes.

Jewel Note: I have omitted the oil and sprayed the chicken with cooking spray and still had wonderful results! I also sometimes substitute 'Panko' for the breadcrumbs, which makes the chicken crispier. Panko is a Japanese breading that is available in most supermarkets in the Asian section, or in Asian markets It comes in pretty big chunks, and I just crush it with a rolling pin to make it more crumbly! Hope you like this one!

Chicken Gravy (Costco Gravy Mix...gasp!) and add 1/4 tsp of cinnamon to the gravy

I keep seeing references to this recipe. But I can't find where Jewel posted it. I did a search but that didn't work out. Does anyone have this one handy??

Thanks Greysangel! Just one more question.... I'm a beginning cook who thought she had at least heard of most spices. But what in the world is termeric??

Well, I'm not JeAnne, but turmeric is an Indian spice which is bright yellow. It's primarily used to give things a wonderful golden color. If you don't have any you wouldn't lose too much flavor, but rather a visual aspect. Not to say it's flavorless, just that the flavor is mild.

yup...backwards for me, too. Wierd.

JLK: turmeric is an orange-colored spie often used specifically for the color, but it does have a taste, too. It's used in pickles and relishes, and also chicken and seafood dishes. This is all from the back of my bottle. Mine is McCormick, so I'm sure you can find it in the grocery store.

Turmeric is often used as a poor substitute for saffron in recipes. I had saffron, not turmeric :rolleyes:, so I used that instead. (I'm such a snob!)

I see JeAnne's post first too! :confused: OH well! Turmeric is mostly for color in this dish...you can leave it out if you wish! ;)
