View Full Version : Wanted: Menu for family lunch

I don't know what is wrong with my brain today, but I just can't think of all those recipes I have been wanting to make. Anyway, I am having 8 adults, 5 kids over for lunch the Saturday after Thanksgiving. I can't figure out what to make. I want to steer away from the traditional Thanksgiving meal, I think we will be turkied out by Sat. Since it is lunch, I wanted something less formal. I was thinking BBQ Brisket sandwiches, but I don't want the trad. baked beans, potatoe salad, chips, etc.
Any suggestions for a menue would be greatly appreciated.
You all are so creative, I know it will be a great meal. thanks

Well, instead of potato salad, I would recommend broccoli casserole. I will have the carbs and "hide" some veggies. It is YUMMY! Another possibility might be hash brown potato casserole...it is hard to get my husband excited about anything, and he RAVED about it! If you want beans, just not baked, how 'bout refired beans? Those items give you the traditional "items" with a different spin!

I had my mother and father=in laws over for lunch last Sunday and made the Foccacia sandwiches with fresh spinach, carmelized onions and feta cheese! We served with potato salad, but I was thinking of greek pasta salad too. We had ice cream cones for dessert, but you could always serve sliced apples with carmel sauce! Enjoy!

I don't know why I stress over these things, it is family, and what matters most is the getting together.

Anyway, anymore thoughts would be great.

What about a jicama coleslaw as a side to BBQ? Or a roasted corn salad of some sort?
