I am going to an engagement party this weekend with a Mexican Fiesta theme. I have been told that we don't need to bring anything, but of course I don't want to show up empty-handed. I don't know for sure what they are planning for the menu, but I know that there will be good margaritas! Any suggestions on something I could bring that would keep with the Mexican theme but would be different and interesting??

What about a Flan? Wasn't there a recipe for a pumpkin flan floating around on the boards?

How about some Mexican Beer?

I guess that's not too interesting or different but maybe you could find some obscure brands.

Another thought...Mexican cheese?

Mexican Wedding Cakes (cookie)
Would go with the theme great!

Mexican Wedding Cakes
1 cup butter
1/2 cups powdered sugar (sifted)
1 teaspoon vanilla
2 1/4 cups flour (sifted)
1/4 teaspoon salt
3/4 cup chopped nuts


Mix butter, sugar, and vanilla
In large bowl mix flour, salt, and baking powder
Mix dry ingredients into butter mixture
Mix in nuts
Chill at least 1 hour
Roll dough into 1 inch balls
Place on a greased cookie sheet (cookies don't spread)
Bake at 400 F for 10 to 12 minutes
While still warm roll in powdered sugar
Let cool
Re-role in sugar

You could place each cookie in a mini muffin paper(white) and fill a box with them. Tie with a pretty ribbon, it could be a gift or enjoyed that night.

Here is another version:
Mexican wedding cakes
1 cup butter, softened
8 tablespoons confectioners' sugar
2 cups all-purpose flour
2 cups chopped fine walnuts
1/2 teaspoon vanilla extract


Directions

1 Preheat oven to 350 degrees F (180 degrees C).
2 Mix all the ingredients together with a mixer until well blended. Roll dough into round small balls.
3 Bake for 10-12 minutes.
4 Cool completely then roll in additional confectionary sugar.

A flan seems a good idea. What about a chocolate cake? In Mexico chocolate, cinnamon etc are widely used.
You could also ask the host what she needs. You could also help by providing a dip, beer or a sangria.

Just wanted to disagree about the Mexican Cheesecake, (no offense S). http://www.cookinglight.com/bbs/wink.gif I made it for a party and everyone loved it. Plus, decorated with grape tomatoes and green onions, it really looks great.

I would not recommend the mexican cheesecake app. It was too much work and not that great.
