View Full Version : ISO your favourite strawberry bread/muffin recipe

Morning Guys,

The strawberries in my fridge are in need of some action other than smoothies. Any ideas?

I've been craving quick breads lately but haven't made anything (too hot to have the oven on), but I'm giving in.

So, I'm on the search for a nice, light strawberry bread or muffin recipe. I'd prefer a bread though! :D

I have all kinds of stuff I'm can throw in too ... i.e. poppy seeds, walnuts, almonds, etc ...

I hope you've also got some ripe bananas kicking around, because I've got a yummy bread recipe for you (Warning: NOT lowfat!:o )

Strawnana Bread
Quick and easy to make, oh so fruity, and very yummy!!
Makes 2 - 9 x 5 inch loaves (24 servings).

4 eggs, lightly beaten
2 cups white sugar
1 1/2 cups strawberries, mashed
1 cup mashed bananas
1 tablespoon orange zest
1 cup vegetable oil
3 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped walnuts


Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease
two 9x5 inch pans.
2 In a medium bowl, mix together flour, baking soda,
cinnamon, salt, and nutmeg.
3 In a large bowl, combine eggs, sugar, strawberries,
bananas, orange peel, and oil. Beat with an electric mixer at
medium speed for 2 minutes. Add flour mixture, and stir just
until moistened. Stir in walnuts.
4 Bake for 1 hour, or until loaves test done. Remove to
wire rack to cool.


I have made this recipe using less oil, and it still turned out well. You could probably also sub egg whites for some of the eggs.

i do have some ripe banana sitting in the freezer ... i actually found something similar to this over at BHG ... i think it was a lighter bread also if you're interested ...

i actually think i'm going to do the raspberry almond coffeecake but sub with strawberries ... that's been on my list FOREVER! ...
