Just found out DH and friend from out of town want to eat in tonight, not out....Have all the ingredients for an Italian casserole (Rigatoni with sausage and olives and cheese, thanks to the BB) but need a quick dessert idea. I thought the Grasshopper pie would be nice, but it won't have enough time to set. Any ideas?

how about a fruity crisp of some sort? The CL rustic grape tart looked good, CL lemon bread pudding with blackberry sauce is delicious. There's a WW recipe for chocolate cranberry tart which is easy and delicious.

With the Italian theme (I guess) what about Tiramasu (SP)? I think I remember a light and quick version in the 2001 cookbook.
Otherwise - what about a fresh fruit shortcake. Something simple - say Strawberries with lime juice to make syrup.
Hope the meal goes well.

what about tiramasu (spelling?) to go along with your itatlian theme? i could of swore the an 'instant' tiramasu recipe provided through CL ... its in one of my annuals (have 2000, 2001, 2002) ...

If you want REALLY quick and easy, I made a dessert based on DH's grandmother's description and it turned out to be delicious.
Layer or mix fruit, as if for a fruit salad. I just mixed peaches (frozen--gasp--did not feel like slicing and peeling them) and blueberries.
Mix sour cream (I used reduced fat), brown sugar, and a tiny bit of almond extract to taste and dollop on top of fruit.
I think this would also be good with a bit of granola sprinkled on top.

Angel food cake with fresh fruit and cool whip light!
That's my favorite quick dessert in summer. Or sub grilled lowfat pound cake slices for the angel food cake. The grilling is an unexpected touch and tastes good, too.

The White Russian Tiramisu is always a hit, and generally only needs 2 hours in the fridge. I made it a couple of weeks ago, and my guests loved it. I always get asked for the recipe whenever it is made.
Or, since blueberries are in season, the Blueberry Crisp a la Mode is great and fast to put together too.

Thank you all so much for the quick responses! I love this board.
And thanks to all of you who suggested Tiramisu! I was so stressed thinking about what to make at the last minute that I didn't even think about that! I have everything but whipped topping on hand, so I'm running out the door in a minute.
The other suggestions are great. I will keep this thread on file for if this situation ever arises again.

BTW, all the tiramisu recipes are online, so I didn't even have to crack open a book!

Thanks, Valchemist. I don't know if I'd consider myself an expert at using this BB, but I know it's always there for me in a pinch, which is a relief! Tiramisu was the perfect suggestion for my dinner. I made CL's recipe from 4/02 (that's the date it says online, but I don't remember seeing it in the magazine that recently! I will have to check for sure). Anyway, it was very easy to make, and very tasty. A repeater. Thanks again everyone!

hmmm...
you have a cooking need so you come here early in the day and post a request. you check back later to find lots of good suggestions. you do a search to find one of the recipes mentioned. you make the recipe with great success that evening.
sounds like you have figured out how to use the BB pretty well to me!
