In one last attempt to get DH to like catfish (he says that it is too "mushy"), I made CL's Oven-Fried Catfish for dinner last night and it did its job-- he wants to have it again!
Small changes in the recipe-- we have some really hot hot sauce, so I decreased the amount from 1/4 cup to 1T. Plenty. Then I baked the fish for about 5 minutes longer than the recipe specifies, and after that put in under the broiler for 3 minutes (until the top browned). Next time, instead of baking it on a baking sheet, I will use a rack on the baking sheet to keep the fish up and out of its juices. But just the fact that he liked it makes me think that this recipe is worth noting!
Also had the Black-Eyed Peas with Sour Cream Dressing which was featured in the same article, baked sweet potatoes, and cornbread. And, of course, beer (since I had to open a can for the recipe anyway!!!)
With 93% humidity and a temperature of 88 degrees outside (I used the toaster oven rather than my "big" oven)-- it felt as though we were "Down South"!!! :D
