View Full Version : Need recipe "Ice Cookies", please.

My aunt asked me to help her find a recipe for what she calls ice cookies. She says they are very flat, thin, and crisp. I have never personally had one but told her I would help her search. Thanks for any help you might have.

Do you think she might mean Ice Box Cookies? The ones you form into a roll, chill, and then slice? You could make those very thin. CL had some recipes for ice box cookies that I can post if you want. Others may have recipes that are not low fat.

What you described sounds very much like lace cookies... do you think that could be it? They're almost wafer thin, and rather large, since they spread so much; they almost look like lace because of the way they spread.

I finally heard back from my aunt and someone else had found the recipe for her. It was Norwegian Lace Cookies and as long as I am at it I will pass it along. She says they are great (with butter, sugar, eggs how could they not be) but I'm pretty sure not a "Light" recipe. Thanks guys.,

NORWEGIAN LACE COOKIES

1/4 lb. butter or margarine
2/3 cup sugar
1-1/2 cups dry oatmeal
1 teaspoon baking powder
1 tablespoon flour
1 egg

Melt butter, pour over oats.
Beat egg and beat in sugar.
Mix baking powder and flour
and stir into egg mixture,
then into oat mixture.
Drop by tsp. onto greased
cookie sheet 3 inches apart

BAKE AT 350 DEGREES
8 TO 10 MINUTES. Makes 24 cookies

NancyR....so glad your aunt found her recipe. I know how it feels when you really crave it and can't find it. When it comes to butter type cookies there is no such thing as low-fat....but that is what the holidays is all about....indulge but portion control. http://www.cookinglight.com/bbs/biggrin.gif Oh, and thanks a bunch for posting the recipe to share with us.
