This is one from MasterCook. There were a couple of others. One was an Orange Wladorf and the other was a cranberry. Will post if interested.

Waldorf Salad

Amount Measure Ingredient -- Preparation Method

TOSS TOGETHER
4 medium red apples or green apples or 1/2 of each
for nice color, washed and diced
1/2 teaspoon brown sugar
1 tablespoon lemon juice

1 cup chopped celery
1/2 cup pecans or walnuts
2/3 cup mayonnaise

Wash, core and dice unpeeled apples. Sprinkle lemon juice over them and toss together gently to coat, then sprinkle brown sugar over the apples and toss again. Chill for at least 20 minutes. Add celery and nuts then stir in mayonnaise, adding only enough for desired consistency. Serve on a bed of greens.

NOTES : A crunchy, sweet and hearty salad of apples, celery, nuts and mayonnaise.

This salad can easily become a summer luncheon main dish by adding cooked, diced chicken. You will probably need to add a little more mayonnaise. Another nice variation is halved grapes in addition to the apples, or pears as a replacement for the apples.

I am just curious if it matters whether you use walnuts or pecans. I am not a big fan of walnuts, but i love pecans. However, I have never had anything but walnuts in the waldorf salad. does the type of nut really change the taste?

I think it does. Walnuts and pecans have very different flavors, and slightly different textures.

I would use whichever nut you prefer. Personally, I like to toast the pecans before I put them in anything. I, too, prefer them to walnuts.

I have always made waldorf salad with pecans. Not only do I prefer them, but in the South, they are more plentiful.

I USE APPLES, RAISINS, SHREDDED CARROTS, MIX WITH HELLMAN'S MAYO OR SOUR CREAM ADD PECANS OR WALNUTS AS YOU PREFER.
