I made these last night to accompany a Creamy Tomato Basil Soup from a while back (7/00 maybe?).

it was slightly more intensive than i would have liked, but it made 2 really hige rolls, and i put one in the freezer for later (but i don't know how that will turn out!)

here are the changes i made:
- i used ready made dough from my grocery store's bakery.
- i roasted chunks of garlic along with the veggies
- i used feta instead of goat cheese, because that's what i had around
- i also added some mozzarella shreds because the feta didn't look like i had enough
- instead of thyme, i used basil and oregano (oh, and some garlic powder too!)

i liked these a lot (rated them 4 out of 5). DH loved it, rating it a 5!

i might make it again. it would be good for a crowd, otherwise i thought it was too much work. unless the one from my freezer comes out well...then it was worthwhile.

it's important to let the veggies cool a bit before putting them on the dough to roll up. i would say there would have been room for some more veggies, though.

ps it made a great side for the soup. parts of the rolls were very bready, which were good for dipping.

I made these last weekend too, and ended up with way more veggies than I needed. The end result was more like a sandwich, still very good, though.

I had a lot of problems rolling the thing up becuase I did not let the veggies cool enough before rolling, but it did not affect the taste any.

I ended up freezing half of the dough for tomorrow, so I'll give it another whirl. I will make sure to cool the veggies before rolling this time!

Thanks for the reviews! I had my eye on this recipe, but as there are only 2 of us in the house I figured it would make way too much and wasn't sure about halving the recipe or freezing some. I would love to know if it comes out of the freezer ok, mb.

i will try to remember to post my reply on how the rolls came out after being in the freezer. my guess is that they will be fine though!

i was thinking about it earlier and realized that these might not freeze well because they contain potatoes, which tend to not do well in the freezer.

maybe we'll take them out this weekend for lunch and see how they are.

These caught my eye and I'm looking forward to trying them. I'm waiting for cooler weather here, though, before I do. I'm impressed you made these in the summer (in Florida!)

These were on the menu tonight and though they take a while to make (nothing complicated, just time-consuming), they're well worth it!

I made them just as directed, but thought about lots of variations: added cooked sausage, prosciutto, or ham; different cheese(s) much as Marisa did; different spices. One thing I would definitely suggest is some sort of sauce, like a marinara (bottled or homemade). We had these as a main course with a side salad & thought the sauce would be a great addition.

i still have my leftover roll in the freezer. i should get to it one of these days...

ralph, i agree on the sauce. that is part of why i chose to serve them with tomato soup!

SQ, if i waited for cooler weather to make some of these things, i think we'd be eating salads year-round! :cool: :p :D

we defrosted the second roll and had it for lunch on sunday.

it was definitely better the first time around. DH didn't finish his lunch, even with marinara sauce for dipping. "too dry" he said. i ate it anyhow :rolleyes: i didn't think it was horrible, but not something i'd serve to guests either.

so my feeling is that if you aren't going to be able to eat all the rolls, then just try to make 1/2 the recipe...... or invite extra people over to share all of it with you!
