I posted a similar thread earlier with no luck but I thought I'd try again. Anyone have a CL recipe from a few years back (pre-96) that is for tuna salad with chickpeas? Or does anyone have a suggestion for a good tuna salad without mayo?

I don't have a recipe w/out mayo but if you just don't want real mayo, there are plenty of no egg mayos and such available at health food stores. How about a cheese sauce?

Bean Salad with Tuna

Recipe By :

Amount Measure Ingredient -- Preparation Method

2 tablespoons fresh parsley -- chopped
2 tablespoons rosemary oil
OR
2 tablespoons roasted-garlic oil
1 tablespoon fresh lemon juice
1/4 teaspoon pepper
1/8 teaspoon salt
1 garlic clove -- minced
19 ounces canned chickpeas -- drained
19 ounces canned cannellini beans, or other white
beans -- drained
3 cups escarole -- torn
6 ounces tuna in water -- drained, and flaked
2 medium tomatoes -- quartered
Red onion slices -- optional

Combine first 8 ingredients in a medium bowl; toss well. Place 3/4 cup escarole on each of 4 salad plates, and top each with 3/4 cup bean mixture. Arrange one-fourth of tuna and 2 tomato wedges on each salad.

Here's another one. This one used fresh tuna instead of canned.

Tuna Salad with Garbanzo Beans

Description: This light salad, made with fresh tuna, can be used as an appetizer or the main event for lunch. Serves 12-16.

Ingredients
2 pounds fresh tuna
2 tablespoons Dijon mustard
½ teaspoon cumin
½ teaspoon salt
½ teaspoon pepper
2 tablespoons red wine vinegar
2 teaspoons lemon juice
1 cup olive oil
1 cup Kalamata olives in olive oil
1 can (15 ounces) garbanzo beans, drained
2 teaspoons rosemary

Spray a large heavy skillet with cooking spray. Brown tuna over medium heat, about 5 minutes on each side. (center should be moist but not pink). Remove from heat, cool and flake.

In a large bowl, combine mustard, spices, vinegar and lemon juice. Whisk in olive oil until blended. Add tuna, olives, garbanzo beans and rosemary. Toss to coat. Refrigerate and serve at room temperature.

I am in Houston, and recently in the club and it is fun.

you may be interested in my internet finding; healthy/light cooking methods. they are part of mediterranean diet, wellness food, and has new ways for appetizers.

the fat free tahini dip is made with natural sesame & no MSG, flavorful good with: chips, salad dressing, pasta salad, seafood dishes, and bbq.
i use differet flavor for each and my guests love them all.
cajun, good with seafood
pesto, for pasta salads
caireen, for sandwich spread, bean burgers
& bbq.

tuna salad recipe:
1,1/2 cup fat free tahini dip/cajun
3 cups shredded tuna
3 spoons thinly sliced bell pepper
pinch of salt
1 spoon cumin powder
