I made this this weekend after I saw Emeril cook Bacon Maque Choux (Cajun for corn that's fried and then simmered). The recipe is from the CL Complete Cookbook and also Sept 95. It was very good with good seasoning. I used frozen corn instead of the fresh stuff but it still turned out well.
