WOW! These were really good! The crispy apple slices combined with the Havarti cheese, onion, turkey, etc. was really great. I used a large round loaf of pumpernickel for the bread slices and a Gala apple since I couldn't find Pink Lady or Cameo apples. It was really filling, too, so even my DH was satisfied when combined with soup.I had never tried Havarti cheese and liked it a lot.

Open-Faced Turkey Sandwich with Apple and Havarti

Amount Measure Ingredient -- Preparation Method

4 2 ounce slices country or peasant bread
4 teaspoons low-fat mayonnaise
4 teaspoons Dijon mustard
1 cup arugula -- trimmed
4 1/8 inch slices red onion
12 ounces deli turkey -- sliced
2 Pink Lady or Cameo apples -- cored, cut crosswise into 8 slices 1/4 inch thick
1/2 cup Havarti cheese -- (2 ounces) grated
coarsely ground pepper

1. Preheat broiler with oven rack in middle position.

2. Spread each bread slice with 1 teaspoon mayonnaise and 1 teaspoon mustard. Layer each slice with 1/4 cup arugula, 1 onion slice, 3 ounces turkey, 4 apple slices, and 2 tablespoons cheese.

3. Place sandwiches on a baking sheet, broil 4 minutes or until cheese is bubbly. Remove from heat; sprinkle with pepper, if desired. Serve immediately.

Yield: 4 servings (serving size: 1 sandwich)

I have to agree that these were fantastic! The juxtaposition of the havarti and red onion with the sweet apple was so yummy. It was quick, easy, and a great way to use up the surplus apples.

I made these for dinner last night too. I used a rather soft-ish rye bread, and felt that it was too mushy for this sandwich, but barring that, it was really great. My DH who hates cheese (or so he claims) even liked it. I used fresh spinach instead of arugula (don't care much for arugula). All in all very good, and I would definitely make them again. Fast and easy too.

YUMMY!!!!!

Made these sandwiches for lunch today (while watching the Chiefs actually BEAT Miami - Yay!!!! Who'd have thought?).

But, I gloat, and digress. Back to food: This is a wonderful flavor combination! We rated it a 9/10. Maybe its because the weather is turning, but I just loved the turkey/onion/apples/cheese combination!!

My only sub: didn't use the arugula. (And - I was probably heavy on the Havarti :o ).

Best CL recipe I've made in quite a while.

I think it tastes like a cross between edam and swiss--mild and buttery, with a little snap.

Another WOW-even with the good reviews I wasn't so sure about these, but they rated a big, fat, solid 10 here at our house. The DH was almost moaning with pleasure (he is a real sandwich person). I used romaine instead of arugula, and used the Walnut-Rosemary Bread (10/02) that I had made eariler in the week instead of the peasant bread. I served them with Herbed Potato Salad (CL-7/02) which was also good.

We had these for lunch today. I used spring greens instead of arugula, but otherwise followed the recipe. We also thought they were very good. My DH was alittle skeptical about the combination of turkey, apple and cheese on a sandwich, but he actually liked it. A different and unique sandwich!

I finally made these last night, we used an 8 grain health bread(from costco) and I subbed mixed greens for the arugala. They were great, my mom and sister came over (Halloween) and they both liked them. We used Jonagold apples because that is what I had from the market. Very good!!

Can't wait to try it with leftover thanksgiving turkey.

I have bought these to make for lunch several times now (I buy everything, then make a sandwich every day for a week). The first time, I couldn't find plain Havarti, so I bought some Havarti with Dill. It was great. This second time, I found the plain Havarti, but I really miss that great dill flavor, so the next time, I will use that again. These sandwiches are quickly becoming one of my favorite CL recipes ever!

We made these sandwiches yesterday, and thought they were great! Subbed spinach for the arugula since that's what we had. Didn't use quite all the apple slices, either---perhaps the bread was too small? Anyway, they were really good, and incredibly easy to make. I will definitely make them again for a quick, healthy, delicious lunch.

Just came across this thread while searching for interesting sandwiches. Would there be any reason why this couldn't be done as a regular sandwich rather than open faced? As I type this, I realize that obviously, I could put another piece of bread on top if I want, but I was wondering if those who have made it think that it would be too much bread or if something would be lost in not having it open-faced. Thanks!
