I've noticed that CL has had several different roasted red pepper dips over the years. Does anyone have a favorite that they'd recommend for my first try with this? Thank you!

I've never tried one of the CL red pepper dips. Maybe someone else can respond.

Just to let you know, lou, things are pretty quiet around here on the weekends, so if you don't get many responses, that is why.

This is the only one I've made. It's reaaly good! I use cilantro in it, but I think the original recipe uses parsley. Nobody suspects that there are tofu and beans in this dip!

Spicy Roasted Red Pepper Dip

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
7 ounces roasted red peppers -- drained
6 ounces low fat firm tofu
1/3 cup cilantro -- chopped
2 tablespoons lime juice
1 tablespoon oil
1/2 teaspoon salt
1/2 teaspoon cumin
2 cloves garlic
1 can cannellini beans -- drained and rinsed
1/2 jalapeno pepper -- seeded

Combine everything together in a food processor and process. Dip will be somewhat chunky.

That sounds really good!

One question, is the tofu the silken type in the box or the other kind that comes packed in water?

but there are two kinds of silken (as I learned in my cookies n cream ice cream flop). one type is refrigerated and the other isn't. I think sarah wanted to know which of those to use.

Two more tag-on questions:

Do you roast your own peppers or use the bottled kind? I am inferring from the recipe instruction to "drain" that it's the bottled ones.

Do you have a nutritional analysis for this? I'm feeling really off-bubble because I have had a weekend of indulgence -- my lunch today was a bag of Gardetto Snack'Ens from a vending machine. At least I got 2 g of fiber with my 11 g of fat! :o

I buy jarred peppers, because I am not a foodista like many:o . Sorry, I don't have the nutritional info and I couldn't find it in the dang recipe finder. But, hey, everything in there's good for ya!
