Can anyone tell me the difference? I'm making the Thai Peanutty noodles tonight and I could only find the green, not the red the recipe calls for. Thanks :)

Completely substitutable, at least at my house!
There are difference between red and green curry paste, for sure, but the differences are not as big as the differences between one brand of red curry paste and another brand of red curry paste! I think of green as a little more mellow and herbal, while red is heartier and spicier. It could jsut be that my DH prefers green curry chicken and red curry beef.....
Both will give you that Thai fireiness.

I agree. Whenever we've made red curry, we put in pineapple for a spicy/sweet taste and to cut the heat. Green curry is more mild, although if you put in a lot, it tends to be firey!
