When the recipe calls for leeks trimmed and cut in 3 pieces, do you think it means the green part included? or does it mean the green part cut off and the white part cut into 3 pieces. I am making Chicken in a Pot, Oct 99, p205. Leeks are kinda confusing to me.

I love leeks! Oddly enough, though, I couldn't seem to find any today at the farmer's market. Wierd...
Anyway, I would suggest cutting off the tough dark green parts at the ends, but keeping the lighter green parts closer to the bottom and underneath the tough parts; they're definitely good, too. Use as much of it as you can; they'll give the dish lots of flavor. Hope this helps! http://www.cookinglight.com/bbs/smile.gif
Just a thought...after you get the portion of the leek you are going to use, my guess is that cut in 3 sections means lengthwise. More of the flavor will be available this way.
