My daughter in law recently told me she'd like to have a vegetarian cookbook for Christmas. She's a very busy mom, with three boys, ages 7, 4 and 18 months so the recipes need to be relatively simple. Any recommendations would be greatly appreciated.

I absolutely LOVE Roz Denny's Ultimate Vegetarian Cookbook. Of all my cookbooks, it's my favorite and my most used. Her vegetable paella is wonderful as is my signature dish- Broccoli Risotto Torte (not the easiest or fastest but certainly delicious and comforting). A large cookbook, it features many great full-color photos.

I really love Deborah Madison's Vegetarian Cooking for Everyone. It's an excellent resource for both veggies and non-veggies alike, with lots of great information about how to select, store and prepare all kinds of vegetables. :)
Here's another thread that might have some ideas for you:

So happy to see this post! I was shopping at Barnes and Noble today, looking through all of the cookbooks. I was thinking that I would like to plan more vegetarian dinners, but wasn't sure which would be the best cookbook to buy. I thought of the BB and knew that I had seen previous posts on this subject. Will be anxious to see which cookbooks are recommended!!

Any Mollie Katzen books, even the children's books "Pretend Soup" and "Honest Pretzels" would be great in additon to a more adult cookbook because they contain vegetarian recipes that are quick, healthy and involve the kids.
I second the recommendation for Vegetarian Cooking For Everyone. I keep borrowing this one from our library and have decided to buy it for myself.

I also love any of the Mollie Katzen books. She has "Vegetable Heaven" or "The New Moosewood Cookbook" which are great. We are not vegetarians, but her books are great at letting carnivors ease into a vegetarian lifestyle. I highly recommend them.

We love Vegetarian Planet (a very comprehensive book) by Didi Emmons.
Alos excellent (simple but tasty) are The Vegetarian Grill and Roasted Vegetables, both by Andrea Chesman.

EllenL,
In Harvard Square, Cambridge MA, Didi Emmons has opened a restaurant, Veggie Planet. The menu is mostly pizzas, soup, salad and all of it is so wonderful! It is one of my non-veggie DH's favorite pizza's in the area.
If you are ever in Cambridge MA, make sure you go there!

I really like "The Occasional Vegetarian" -- as the title indicates, it's written for people who aren't always vegetarian, but like to have a vegetarian meal once in a while. I'm vegetarian, and I love it. Lots of great recipes, mostly vegetable-based (as opposed to tofu, tempeh, etc.). They're all pretty simple, and she gives menu ideas, etc., which I like. My favorite recipe from the book is the Winter Tomato Soup, which I make all the time.
I also like "Vegetarian Planet."
