Good stuff!

Quite easy to put together, just a little time-consuming. Instead of microwaving the potato as the recipe recommends, I peeled & chopped it, then simmered it in boiling water like was recommended for the mashed potato recipes in the October issue. (After all, it gets mashed anyways!) I also didn't remove too many of the ribs from the jalapeno, so these had quite a kick. Fortunately, the salsa wasn't too hot, but it complemented the croquettes perfectly.

Thanks for the review, Ralph - I've marked these to try! One question: what did you serve these with? Were they the main course, or just a side? Or a snack? ;)

Main course. Served with dollops of salsa & sour cream as it recommends. I don't particularly care for traditional cole slaw, which was also suggested, so I made the Curried Celeriac Slaw.

I tried these for dinner and what a disaster! I couldn't get the patties to hold together for anything, not even after I tried just mixing the panko into the quinoa/potato mixture. Finally I gave up and dumped it all in a skillet and cooked it like hashbrowns. It would've made an OK salad except that I had already added the raw egg.
