Hi there,
Does anyone out there have any great low fat or low cal salad dressing recipes? I tend to make my own salad dressings most of the time as I don't like most of the store bought ones. My current fave is balsamic vinegar, dijon, olive oil, garlic and oregano but I need to branch out- Any good ideas?

I don't really measure anything, but I would guess it's about 1/3 cup balsamic vinegar, 1/4 cup olive oil, 1-2 TBSP dijon, 1 tsp oregano and 1-2 garlic cloves.
Very rough estimate though, I just eye-ball it.

BASE RECIPE:
1 cup nonfat cottage cheese
1/3 cup nonfat buttermilk
CREAMY BLUE CHEESE DRESSING:
1 tablespoon blue cheese and black pepper to taste.
CREAMY FRENCH DRESSING:
1 teaspoon no salt added tomato juice
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder -- or to taste
Add additional tomato juice to thin as
necessary.
CREAMY ITALIAN DRESSING
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion flakes
CREAMY THOUSAND ISLAND DRESSING
1 tablespoon pickle relish
1 tablespoon chili sauce
1/2 teaspoon dry mustard
Place ingredients in a blender or food processor and blend until smooth and creamy.

Your salad dressing receipe sounds good. Do you have the measurements? I don't have any great ones. I find it cheaper to just buy the non-fat ones at the store when they're on sale and I have a coupon.

lesliem - here are some of my favorite combinations. All start with very small quantities of olive oil, usually about 1 part oil to 3 parts vinegar.
* Red wine vinegar, garlic, minced onion (or onion juice), tarragon.
* Sherry vinegar, garlic, chives, black pepper.
* Lemon juice, salt & black pepper, mint (or marjoram), kalamata olives.
* Red wine vinegar, basil, black pepper.
* Et cetera (my favorite). http://www.cookinglight.com/bbs/wink.gif
* I also like to sprinkle a tiny bit of gorgonzola or freshly grated Parmesan or Romano over the top of the salad after it's been dressed -- just enough to create a kind of light "film" on top -- and then give the salad another quick toss.
* I once read a recipe that called only for some pickled hot cherry peppers chopped up as a dressing. Also, emilycat once suggested using the brine from Moroccan olives as a dressing. I haven't tried either of these yet, but I keep meaning to.

CL had a simple green salad a few issues ago (October?) in the article on salt. I don't remember the proportions (I'm at work) but you just sprinkle the greens with salt and toss. Then you add lemon juice, olive oil and black pepper (I think) and toss again. I've made it several times using an organic herb salad mix and it is wonderful!
