Hi Everyone!
A couple of months ago, I found the following recipe on one of those copycat recipe websites. I finally tried it last night and it came out smelling and tasting like the real thing. Since recipes for Kahlua and Irish Cream have been posted, I thought I'd share it with you all!

Di Saronno Amaretto
1 cup water
1 cup granulated sugar
1/2 cup brown sugar
2 cups 80-proof vodka
2 Tablespoons almond extract
2 teaspoons vanilla
Combine water and sugars in a saucepan over medium heat.
Heat until boiling, and all sugar is dissolved. Remove from heat and let mixture cool for about 10 minutes.
Add vodka, almond extract and vanilla. Store in a sealed bottle. Makes 3 cups.

I am confused though, if you add vodka to warm liquid as in this or the kahlua recipe, doesn't the alcohol evaporate out??? I think the alcohol will only evaporate if you cook it out, not by adding it to a warm product http://www.cookinglight.com/bbs/smile.gif

Does this also have to sit and "age" like the Kahlua? If so how long?

Happy to know that you are pleased. The recipe did not say that it needed to age like kahlua does, but I'm sure that if you some sit around for a while, it would be even better http://www.cookinglight.com/bbs/biggrin.gif .
I did notice that it lacks the "depth" in flavor of regular amaretto, but it is good none the less.
By the way, I found some "vintage" (4-5 years old) kahlua at my sister's house-she failed to tell me that she doesn't care for it. If it smells and tastes ok, I will be bringing it home and making some of those mouthwatering http://www.cookinglight.com/bbs/tongue.gif kahlua desserts that have been posted recently.

Frangelico is my favorite, too! Gosh, it's heavenly, isn't it? I love having it as an aperitif with about 2/3 liquer and 1/3 water. Do you ever mix anything special with yours, or just drink it, as is? (Which, or course, has to be the best way to enjoy it http://www.cookinglight.com/bbs/wink.gif )

Have you ever had an Irish Nut? It is coffee, Frangelico and Bailey's with whipped cream? Heavenly!!!

I prefer a Hot Nut, just a little coffee and some Frangelico. Yummmmmm Perfect for the cold evenings we've been having! (I'm not a big Bailey's fan or whipped cream.) I've not tried it w/ water(I'm assuming you use hot water?), that sounds good to me!!

Actually, I use cold water...since I have it as a before dinner drink. I really love it that way, and the flavor's not too intense. I'd prefer it by itself after dinner.
I've not had an Irish Nut or a Hot Nut, but they both sound good! I'm actually not a coffee drinker; the only time I ever have it is for a healthy sort of treat if I happen to be at Starbucks or Caribou...I love to have skinny lattes with hazlenut (what a coincidence!) syrup.
I have tasted something called The Nutty Irishman, which is some kind of dessert drink with Bailey's, Frangelico, ice cream, and some other liquer...Kahlua, maybe? Those are sinful...I'd never be able to drink a whole one http://www.cookinglight.com/bbs/smile.gif
