I'm planning on making these for a cookie exchange at work. The recipe calls for vanilla extract. I was thinking of substituting almond extract, or a combination of vanilla and almond. Do you think this would work?

Yes, I think that would work nicely. I just made these last night, they are very good, and they look pretty too. I think that your co-workers will really enjoy them.

I'm making a double batch this time and am trying the apricot version as well. I followed the recommendation made on the board to build up the ends a little bit so the perserves don't leak off the ends of the dough: thank you!

These cookies were a big hit with our supper group. One of the reasons I like them is that they remind me of the real bakery cookies, the big round ones with the rasberry in the middle and the powdered sugar that always made a mess, that was a favorite treat when I was a kid.
