Does anyone have a yummy corn casserole or corn pudding type recipe they are willing to share? I am said to say, but corn is nearly the only veggie (and its not even a real veggie, more a starch) that I like so I volunteered to bring a corn side dish to T-day. Of course, I haven't made one before nor do I have a recipe. Any ideas?

I LOVE CL's Easy Corn Pudding! It's a soft, sweet, moist corn bread. Let me know if you'd like for me to post the recipe.

Corn Pudding (more like custard)

2c. cooked white corn
1c. milk
3 eggs, well beaten
2 Tbl. melted butter
1/2 tsp. salt
1/4 tsp. black pepper
3 Tbl. sugar

Mix ingredients in order given. Pour into a buttered casserole dish and bake in 325' oven for 60-65 minutes, or when knife inserted in center comes out clean.

Makes a full quart of custard

I just did a search and found the recipe in case you want it. It's so good!!! And, easy to make!

Easy Corn Pudding

1 (8.5 ounce) package corn muffin mix
1/4 cup egg substitute
1/4 cup reduced-calorie stick margarine, melted
1 (8 3/4 ounce) can no-salt-added whole-kernal corn, drained
3/4 cup no-salt-added cream style corn
1 (8 oz) carton plain fat-free yogurt

Preheat oven to 350º. Place muffin mix in a medium bowl; make a well in the center of mix.
Combine egg substitute, margarine, whole=kernal corn, cream-style corn, and yogurt; add to muffin mix, stirring just until moistened. Spoon into an 8 inch square baking dish coated with cooking spray.
Bake at 350 for 45 minutes or until set. Yield: 8 servings
Calories: 202; Fat 6.6; protein 5.5; carb 31; fiber 1g.

Creamy Corn Pudding

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter or margarine
3 eggs -- beaten
1 15.25-ounce can whole kernel corn -- drained (Note: I like to use the bag of Bird's Eye Baby Gold and White Corn- 1Lb bag)
1 12-ounce can evaporated milk (can use low-fat)
1/2 cup dry unseasoned breadcrumbs
1 1/2 tablespoons sugar
1 1/4 teaspoons Lawry's Seasoned Salt

In preheated 350ºF oven, melt butter in 1 1/2 to 2-quart casserole dish; grease dish with melted butter and set aside. In large bowl, combine remaining ingredients. Pour into casserole; place casserole dish in large pan filled with enough boiling water to reach half-way up sides of dish. Bake until pudding is just set, about 60 minutes.

Thanks for all the recipes. What is the consistency of these recipes? I think I am looking for something that is like a light/fluffy/airy casserole -- less like a pudding/jello. Would any of these fit that description?

This is not the corn pudding I make. I thought mine might be a little more complicated and went with an easier one that looked similar.

p.s. mine is MUCH MUCH more fattening.

What about the Triple Corn Spoonbread at the end of this thread (http://community.cookinglight.com/showthread.php?s=&threadid=33034)? It's not light and fluffy, but it's not really a pudding either, more of a dense cornbread. Very yummy!
