Thank you! I don't think my grocery store carries this, but I will look. Does everyone use light butter in the Italian Cream Cake? What else could I do if I can't find the light butter?

I am surprised your grocery store does not have light butter, as it is not a new item. Perhaps the store could order it for you. I am not sure if there is a substitution out there--anyone? Perhaps you could use regular butter, but then it would have more fat and calories. How much does it call for--I am not familiar with the recipe?

When a recipe calls for light butter what exactly is it referring to? What brand? Is it in sticks or tub-style? I'm confused!

Our supermarket carries Land of Lakes light butter in stick form, and this is what I use. It is 50 calories per tablespoon.

Light butter comes in both tubs and sticks. Here in Minnesota, the brand is Land O'Lakes and it is next to the butter in the refrigerator section. It basically is butter with added water, so it has less fat. I would only use it if a recipe calls for it--it can mess up a baking recipe that requires regular butter. Good luck.

Just FYI-
We use the Land O'Lakes variety of light butter in our Test Kitchens here at CL. Like Jessica said before, only use light butter when and where it is specifically called for because it will not work in all recipes. Light baking can be especially tricky. Light butter is called for in the Italian Cream Cake and I can tell you that it works very well in this particular recipe. The only substitute would be regular butter. See your store manager about getting this widely distributed product in a dairy case near you!!!
