I just finished baking these for the office party and have to stop myself from eating the whole pan. They are soooo gooood.

If you need to bring bars for a party this will be a good hit.


Cranberry Cinnamon Nut Bars

Ingredients

CRUST:
2 cup All Purpose Flour
1/2 cup granulated sugar
3/4 cup Butter, softened

TOPPING:
4 eggs
1 cup granulated sugar
1 cup corn syrup
1/4 cup Butter, melted
1 (225g) pkg CHIPITSŪ Cinnamon Baking Chips
1 cup cranberries, dried
3/4 cup walnuts, chopped

Preparations

CRUST:

COMBINE all ingredients, mixing until crumbly. Press firmly into greased 13"x9" (33cm x 23cm) cake pan.

BAKE at 350°F (180°C)for 15-18 minutes, or until light golden.

TOPPING:

BEAT eggs, sugar, corn syrup and melted butter together until blended. Stir in CHIPITSŪ Baking Chips, cranberries and walnuts. Pour evenly over crust.

BAKE for about 30-35 minutes longer, or until set and golden. Cool completely, then cut into bars.

Makes: about 3 dozen bars

This looks good, but what are chipits? Are they like the Hershey's cinnamon chips?

Linda, I think that Chipits are the same as Hershey's cinnamon chips. I remember a thread discussing Chipits not too long ago and they were a Canadian product I think made by Hershey's.

How do you think they would taste with chocolate chips instead of cinammon chips? I have alot of chocolate chips that I want to use up before I eat them all straight from the package :)

I really like the combination of chocolate and cranberries, and I think you could sub the chocolate chips for the cinnamon chips with no problem.

Okay...I made these yesterday with the chocolate chips instead of the cinammon chips. They were VERY GOOD but VERY sweet. The cinammon chips may really be the way to go...but everyone at the party loved them and asked for the recipe.

I just took these out of the oven and they smell soooo good! Haven't tasted them yet, but as soon as they cool off I will sample! I am planning to take some of these to work either tonight or Tuesday night. I really like cinnamon chips and have only made the oatmeal cinnamon bar recipe on the back of the package. Thanks for a new recipe!

you are right -- these are wonderful!!!

I work from home, so I rarely get the chance to bake things to bring into work. But this week, I have some in-house workshops that I have to attend, so I have decided to bake a few things. good thing I am bringing them into work because they are way to good to be sitting around here without getting devoured in a day or two.

I actually left out both the cranberries and the nuts. I think they are GREAT this way. They are basically a sinfully chewey cinnamon bar with a shortbread crust. YUM!

thanks again for posting helene. cinnamon lovers are going to die for these.

I don't have the nutritional info for the cinnamon chips in my mastercook. and I threw away the bag. if anyone has the nutritional info for cinnamon chips, can you post them here?

I just need the serving size, calories per serving, and fat grams per serving. thanks!

1 T. per serving, 80 calories and 4 g. fat per serving, 19 servings per bag
WOW, 80 cals. and 4 g. fat per TABLESPOON?!?! :eek:

here is the nutrtion assuming 36 bars:

Per Serving (excluding unknown items): 152 Calories; 7g Fat (41.1% calories from fat); 2g Protein; 21g Carbohydrate; trace Dietary Fiber; 35mg Cholesterol; 69mg Sodium.

but those would be really small.

here is the nutrition assuming 24:

Per Serving (excluding unknown items): 228 Calories; 11g Fat (41.1% calories from fat); 3g Protein; 32g Carbohydrate; trace Dietary Fiber; 52mg Cholesterol; 104mg Sodium.

Those sound decadent. I have never seen cinnamon chips. Interesting. Thanks for the recipe. Gosh, I have a lot of new things to try!

Oooh, this recipe was so delicious! :) I brought it to a family gathering and everyone loved it - they are all asking me for the recipe.

Very easy to make snd very decadent! I found the cinnamon chips, made my Hershey's, right by the chocolate chips.

Excellent recipe!! :)

When I make these, I cut them in squares and freeze them. I can enjoy a treat once in a while. I like them cold as well as re-heated.

I cannot get enough of these. And they look so great.

this is just a non-cooking light recipe that Helen posted for us, so there is no issue month or year involved.

in fact it is very "un-light."

Bumping this thread back up because I finally got around to trying these today. OMG these are so yummy! I made them without the nuts, and I think they'd still be great without the cranberries like Val made them. They are so cinnamony and gooey and perfect for me! I am a cinnamon fanatic! :D DH loved them too, he thinks the topping is similar to pecan pie, which he loves. Our only problem is that I only made a 1/2 recipe, so I'll probably have to make them again next week since we'll still be craving them. They're so easy to make too, which may be a bad thing :rolleyes: Thank you so much for sharing this recipe, helene!! It will be repeated often! :)

Question for you all -(sorry for the slight tangent, but...) what's the shelf life on corn syrup? I tried out a caramel corn recipe about 2 years ago...(That one didn't go so well. I tried to tweek the recipe - ah live n learn!) and didn't know what to do with the leftover corn syrup ---until now! Do you think it's okay? It's chock full of perservatives, no? And there isn't anything floating in it..I don't think! :D

I'm sure your corn syrup is just fine. It's basically liquid sugar, and sugar doesn't go bad.

Well I don't know the shelf life of corn syrup, but I have had a bottle go rancid on me before. I can't remember exactly what happened, but you could definitely tell it was spoiled.

Thanks, and nx time make the whole batch, cut it in squares and freeze them.

That's what I do, and when I crave them, I only take a couple out.

I had some cinnamon chips I wanted to use, so I made these which I lightened and adapted from the above recipe. They are soooo good! I'm sure the original recipe is also wonderful too, but I thought I'd share my version.

My changes...cut the recipe in half; slightly reduced the butter in the crust; added vanilla to the filling; elimated the butter from the filling because I didn't think it was necessary; reduced the amount of cinnamon chips; used fresh cranberries in place of dried; and used macadamias in place of walnuts and used less. Yum!! I like the edges the best because that's where they're chewiest. :D

Cranberry Cinnamon Nut Bars

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
CRUST:
1 cup all-purpose flour
1/4 cup granulated sugar
1/8 t. salt -- (1/8 to 1/4)
5 T. unsalted butter -- softened
TOPPING:
2 eggs
1/2 cup granulated sugar
1/2 cup corn syrup
1/2 t. pure vanilla (1/2 to 1 t.)
1/2 cup Hershey's Cinnamon Chips
1/2 cup (packed) chopped fresh cranberries
1/4 cup chopped macadamia nuts

CRUST: Stir flour and measure using the spoon and sweep method. Combine dry ingredients in a food processor. Pulse once to mix. Add butter and keep pulsing until it's combined. Press into greased 7x11 brownie pan (could also use an 8 or 9 inch square pan).

BAKE at 350°F for about 15 minutes, or until light golden.

TOPPING: Beat eggs, sugar, vanilla, and corn syrup together with a mixer until blended well. Stir in cinnamon chips, cranberries, and macadamias. Pour evenly over crust.

BAKE for about 25 to 30 minutes longer, or until set and golden. Cool completely, then cut into bars. Can store in fridge or at room temp.


NOTES : Could easily add even more cinnamon chips, cranberries, and macadamias. Can double the ingredients and bake in a 9x13 pan. Bake about 5 minutes longer until set.

I don't know what they taste like with the butter, but I can't imagine them being any better than they are! These are dangerous for me to have around. I just keep going back to the pan for just a little bit more. :o :D Addictive! Thanks for sharing the recipe.

So you convinced me. I will try them without the butter in the topping.

As you said, those are just addictive. That's why I cut them into squares and freeze them. Then I just take one out at the time.
