I have a recipe for Spiced Pumpkin Fudge which I would like to try this year. It calls for Pumpkin Pie Spice. I'm guessing that this is a combination of cloves, nutmeg and cinnamon. Can I substitute a mixture of these three spices for Pumpkin Pie Spice?
Thanks

Here's what I found on: http://cafecreosote.com/Reference/FoodSubstitutions.html
Pumpkin Pie Spice=
1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger plus 1/8 teaspoon ground allspice plus 1/8 teaspoon ground nutmeg
Here's another from: http://www.foodsubs.com/SpicemixAmer.html
pumpkin pie spice
To make your own: Combine 4 parts cinnamon + 2 parts ginger + 1 part allspice + 1 part nutmeg, all ground OR equal parts cinnamon, ginger, nutmeg, mace, and cloves, all ground

Susan:
Thanks for posting that information. I'm pretty sure that I have all the spices needed to make my own (that's what I was hoping to find out!!).
