Hi Everybody,
Happy New Year! (I haven't been on the board since December 24th.)
My DH bought me a stove top smoker for Christmas. It came with a few recipes, but I'd like to know if anyone out there has one and what's your favorite way to use it.
There's a great recipe for "smokey drumettes" that look great, but not very light. They're chicken wing drums, smoked and then dipped in various sauces. YUM! I did find some frozen wing dumettes and I figure if I skin them, then smoke them, they shouldn't be too dangerous.;) It is white meat, right?
I'm dying to try salmon. Next time it's on sale, I'm there!

Thanks Denise!
Do you debone it first? Or can you smoke it on the bone?
Thanks,
Renée

I have never even seen a stove top smoker. Do they just sit on the burners? Interesting.

Hi Teri,
Yep, they just sit on the top your your burner on the stove top. It's a rectangular shaped pan that contains a drip pan, a rack and a lid that slides in under a lip to seal the pan tightly. This way no smoke escapes.
You place approximately 2 T of wood granules in the bottom of the pan place in the drip tray and the rack. Add the food to the rack. When you see the first few whisps of smoke, seal it with the lid and cook for the recommended time according to what and how big the item is you are smoking.
Doggone, if I can remember the name of the company that makes the smoker! They also make the wood granules. You can't use regular wood chips in the stove top smoker. Fire hazard! But the granules are fairly inexpensive and they come in several different "flavors". The pan comes with a small sampler of 3 or 4 of the varieties.
You can also use the pan to poach or steam food. Or "bake" on top of the stove without using wood granules.
I haven't used it yet, but I'm looking forward to trying it. Probably this weekend.

If it's the smoker that I have, it's from Cameron Cookware in Colorado. I bought mine at a trade show in Chicago a few years ago. It's really a neat gadget.
Here's the website: Cameron Cookware (http://www.cameronscookware.com/). They have instructions, recipes and you can subscribe to their newsletter (free, I think).
