View Full Version : Too cold to grill--how should I cook my filets?

We have some lovely 10-ounce filets thawing that we were going to grill tonight. But then we got a nasty wet cold front and neither DH nor I wants to stand outside while they cook. Being from Texas, I don't have a clue how else to cook a steak. What should I do??

I think Martha Stewart does it on the grill pan to sear and finishes it off in the oven to required/preferred doneness.

But aren't ya tempted, Robyn? :p They're just sooooooo much better off the grill. Fix yerself a hot toddy or 4, put on a parka, and send DH out there to be a man and grill those steaks! Promise him something good like a back rub (or something even better ;) ).

I tend to broil instead of grilling when the snow's so deep I can't see the grill out back. :D

Here's our favorite:
QUICK ROSEMARY STEAKS
2 (4OZ) beef tenderloin steaks (1 inch thick)
1/4 tsp olive oil
1/4 cup pear nectar we use blackberry nectar
3/4 tsp flour
1/4 tsp dried rosemary, crushed
1/8 tsp salt
1/3 cup evaporated skimmed milk
1 tsp white wine vinegar
1 medium red or green pear, sliced
Trim fat from steaks. Coat a medium nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add steaks and cook 2-1/2 minutes, turning to brown all sides. Reduce heat to low; add nectar. Cover and simmer for 10 minutes or until steaks are done. Remove steaks from skillet; set aside and keep warm.
Combine flour, rosemary, and salt in a bowl. Gradually add milk and vinegar, stirring with a wire whisk until blended; add to skillet. Bring to a boil, and cook 30 seconds or until thickened, stirring constantly. Spoon sauce onto individual serving plates; place steaks on top of sauce. Arrange pear slices to the side.

I am from Minnesota. There is no such thing as too cold to grill. I have grilled when it was ten below zero..go for it!
