Hello: I am looking for the CL recipe of Vidalia risotto with feta that appeared on the "Best of" back page this summer. I can't find it on the site via search, and I can't find the issue either! I'm going to stuff mushrooms with it for a caroling party this Friday.
Also, does anyone have a foolproof recipe for mulled wine? Thanks! Jean

Here is the recipe Jean - this is really good!
Vidalia Onion Risotto with Feta Cheese
2 tsp. veg. oil
2 cups chopped vidalia or other sweet onion
2 - 4 garlic cloves minced (I love garlic)
1 1/2 cups uncooked Arborio or other short-grain rice
2 (14 1/2 oz.) cans vegetable broth
1/2 cup (2 oz.) crumbled feta cheese, divided (I put more)
1/2 cup chopped fresh flat-leaf parsley
1/4 cup fresh grated parmesan cheese
fresh ground black pepper
heat oil over med heat - add onion and garlic, saute 1 minute - stir in rice - add 1/2 cup broth, cook until liquid is nearly absorbed, stirring constantly - add remaining broth 1/2 cup at a time stirring constantly until each portion of broth is nearly absorbed before adding the next (takes about 20 minutes total).
remove from heat, stir in 1/4 cut feta, parsley, and parmesan.
spoon into serving bowl, top with 1/4 cup feta and pepper.

Thanks Lanie! Yes, I made this recipe last summer and loved it... Now the challenge is finding sweet onions in the middle of winter!

Hi Jean - you know I don't think I really matters 'that much' - I think spanish onions are just as good - they are not strong. Have you tried the baked spinach & feta one - love that one too!

Oh, poor Jean!
How about I send you some! We have them year-round down here, and acutally, I typically buy Vidalia onions and use them for everything; lately, though, I've been buying the regular yellow onions, because Vidalia's have been more expensive.

There is a "Fall Resolutions" post in the archives--do a search on "mulled wine"--and you will find a few recipes. Hope that helps--if not, I can repost the mulled wine I serve at the holidays.

Well, I found some onions called "Mayan sweets" -- from Mexico I presume. I am one of those unimaginative people who slavishly follow recipes, alas. Thanks for the mulled wine search tip, Concha -- I'll let you know if I can't find it!
