YUM!

Just one small thing...I served this room temperature instead of cold as DH has an aversion to anything remotely resembling a salad. The mushroom mixture sat in the fridge all day and then I just cooked the orzo in the evening and tossed it with the marinade mixture. It worked and both of us liked this quite a bit. Next time I would up the seasoning component as I like it bold and zesty :cool:

And it was my first time trying edamame...YUM!

I'm so glad to hear that this is good at room temperature! I made this yesterday for lunches this week. I ate some today (cold) and really, really liked it. I didn't have any red peppers, so I just left them out. I do think that they would have added quite a bit to the texture of the dish if I'd had them.

I love edamame!!!

This salad is really good ! I made it as a side dish for dinner last night and we all had seconds. This is my second recipe using edamame in less than a week. Prior to that, we were edamame virgins!!;) Now we are converts!

For all of you edamame virgins, I would recommend just boiling some for a snack. They are great. I put some salt and chili powder on them. Yum.

I made a variation of this salad last night. I used a jar of marinated mushrooms that I had bought on a whim at a road side stand, included all the juice, which was vinegar based, and then added all the other ingredients. I never would have thought of combining those ingredients into a salad without this recipe and y'all's recommendation! So while I can't actually comment on the CL recipe, mine was really simple to throw together and was quite tasty. The contrasting textures of all the ingredients was really great. :)

We had this salad at our last supper club meeting and everyone liked it. I think it would make a great picnic salad--something a little different and the colors make a nice presentation.

I agree that it could use a little more spice, but it worked for us because the other dishes were very flavorful.

Yay! Seeing the positive review made up my mind on this one. I'm going to make this for my next supper club meeting in 2 weeks, the theme is vegetarian. I needed something I could make in a hurry and ahead of time, as I'm attending a baby shower the same day.
I'll post back reviews then...

I have a question for those of you who would up the spice a bit. What would you use? Would you just increase some of the spices already in it, or add something like a bit of cayenne?

I made this tonight, for lunch tomorrow. Although, I've only tasted it warm, it is REALLY REALLY GOOD! :) I cannot wait to see what it tastes like chilled.
