looking for online food dictionary/encyclopedia

i see references to cooking/food encyclopedias on the bulletin board and i'm wondering if any of these are online. i usually use epicurious.com, but i would love any others that you guys have. thanks!

Food TV has video "How To" sections, as well as a glossary, etc. It's a great source!
