I happened to see an old copy of Cooking light - October 1994. There was a recipe for Almost Chicken Tempera (I think that was it). Unfortunately, I didn't copy it down - does anyone still have CL's this old and would you mind posting this recipe?? TIA!!!!

Almost Chicken Tempura

Amount Measure Ingredient -- Preparation Method

3 tablespoons Thai peanut stir-fry and dipping sauce
1 pound boneless skinless chicken breast halves -- in strips
14 tablespoons chow mein noodles
3 tablespoons sesame seeds
2 tablespoons all-purpose flour
1/8 teaspoon pepper
Vegetable cooking spray
Place peanut sauce in a shallow dish; add chicken, stirring to coat. Set aside.
Place noodles in food processor, and process until ground; spoon into a large zip-top heavy-duty plastic bag. Add sesame seeds, flour, and pepper. Add chicken to bag, and discard peanut sauce. Seal bag, and shake to coat chicken.
Place chicken strips on a baking sheet coated with cooking spray. Bake at 350 degrees for 20 minutes or until chicken is done.
(serving size: 6 chicken strips)

Darlin~ Raised the family in Auburn and still do a bit of volunteer work in Kent. Anyway, you're not interested in that - you're wanting Almost Chicken Tempura page 146 CL Oct 1994 Fast Food Section.
Almost Chicken Tempura
Preparation time: 13 minutes
Cooking time: 20 minutes
3T Thai peanut stir-fry and dipping sauce
1# Skinned, boned chicken breasts, cut into 24 (1" wide) strips
3/4C + 2T chow mein noodles
3T sesame seeds
2T all-purpose flour
1/8t pepper
Vegetable cooking spray
Place peanut sauce in a shallow dish; add chicken, stirring to coat. Set aside.
Place noodles in food processor, and process until ground; spoon into a large zip-top heavy-duty plastic bag. Add sesame seeds, flour, and pepper. Add chicken to bag, and discard peanut sauce. Seal bag, and shake to coat chicken. Place chicken strips on a baking sheet coated with cooking spray. Bake at 350 degrees for 20 minutes or until chicken is done. Ahhhhhhh, Sneezles ~ You are absolutely correct! However, they weren't showing up when I posted. Darn . . . all that typing just for the exercising of my fingers :)

Darlin~ Raised the children on the East Hill of Auburn, traveled into Kent on 124th SE - We moved to Tacoma in '89 I still get up to East Hill as a Soroptimist friend lives there. On the corner of 132nd and Kent Kangley I recommend the Saigon Rose restaurant. Lovely young lady (Lucy) and her husband. She works days at Boeing . . . originally met her when she was attending UW and working the Mandarin in Tacoma. Yelm ~ Funny, Bob and I are looking at Willapa Bay!!!!!! Yes, almost daily into Auburn.
