I cannot remember when this recipe was published in CL, but it is probably the best chocolate cake recipe I've made. I do not know what I did with the recipe (I think it was probably left behind in my last move). Can somebody PLEASE post this for me? I could not find it in the search. Thanks so much!

You're right, this is the best chocolate cake recipe ever. I don't know which issue it is from either, I found it somewhere on the CL website (not through the recipe search) years ago.

(Note: I've New Zealand-ised the ingredients, so I hope you can figure them all out! If you have any problems, let me know and I'll American-ise them)


Buttermilk Chocolate Cake

1 cup sugar
1/4 cup butter, softened
1/2 teaspoon vanilla essence
2 large egg whites
1 large egg
1 1/2 cups sifted flour
1/3 cup cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup buttermilk
1/3 cup water
1/4 teaspoon baking soda
cooking spray
Chocolate Glaze

Serves 10


Preheat oven to 180°C (350°F). Beat sugar, butter and vanilla in a large bowl at medium speed of a mixer until well-blended (about 5 minutes). Add egg whites and egg, one at a time, beating well after each addition.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cocoa, baking powder and salt in a small bowl, stirring well with a whisk. Combine buttermilk, water, and baking soda. Add flour mixture to sugar mixture alternately with buttermilk mixture, beginning and ending with flour mixture.

Pour into a 9-inch round cake pan coated with cooking spray. Bake at 180°C (350°F) for 35 minutes or until a wooden pick inserted in centre comes out clean. Cool in pan 10 minutes; remove from pan. Cool completely on a wire rack. Spread glaze over cake.

Chocolate Glaze:
1 cup sifted icing sugar
3 tablespoons cocoa
2 tablespoons skim milk
1/2 teaspoon butter, melted
1/2 teaspoon corn syrup or canola oil

Makes 3/4 cup

Combine all ingredients in a small bowl; stir well with a whisk.

Oh, Paula H...you have made me very HAPPY!!! :D

Thanks so much. I spent a year overseas in London, so I'm a pro with metric. However, it looks pretty darn easy to me. You must have semi-Americanized it for me. I appreciate it.
