View Full Version : Looking for a Good Pork Stuffing Recipe

For the last few years our Christmas dinner has been a crown roast of pork. Always a favorite, however we have been unable to find a good pork stuffing recipe to use with the ground pork which comes with the crown roast. Can anyone suggest (or send us) a good pork stuffing recipe? Thank you! Happy Holidays!

Pork and Olive Stuffing

Amount Measure Ingredient -- Preparation Method

2 slices Italian bread (1/2 inch thick) -- cut in 1/2" cubes
1/2 cup milk
16 coarsely chopped black olives -- pitted
1 cup loosely packed, minced fresh parsley
1/2 pound ground pork
3 medium cloves garlic -- minced
1 egg -- beaten
2 tablespoons minced fresh basil
1/4 teaspoon ground nutmeg
Salt
Ground black pepper

TO PREPARE:
Soak bread cubes in milk until softened. Drain, then mix them with the remaining stuffing ingredients including 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl.

Spoon stuffing into the veal pocket, or meat of your choice. Using a trussing needle and twine, sew the pocket shut.
