Hi,
I just wanted to say how much I am enjoying the cookie countdown and wondered if everyone else is? And thanks to Cooking Light - I will be here everyday now checking out the new cookie. I love most of my traditional holiday bakes but always longing for a new one. THANKS!!!!!

I was really excited about the ginger cookies from yesterday...they very much resemble a recipe from my mom's very old McCall's cookbook that I've mangled to look a lot like the CL one (I cut out about 2/3 of the butter, and they were still excellent...all of my aunt's ask for the recipe and they're gone within a day or two). So I'm looking forward to see how they compare to the ones I usually make.

You can find the cookie countdown on the left column of Cooking Lights' home page.

I too love molasses cookies and will enjoy "enlightened" ones - my recipe has tons of shortening.

Today I made Day 7 ( choc. chip meringeue). I was disappointed. They were easy, but only 1/2 of them turned out. And no way should they be baked for 40min. I don't know if this was a misprint but mine only needed about 15 min. after that they burned. And bake them on the top rack of you oven. Once again bottom rack, they burned.

I made the ginger cookies, they were very good, but a little too "snappy" for my taste. Next time I will cook them less, so that they are a little more chewy.

I also made the oatmeal raisin cookies. They were very tasty but (and this may sound odd), they were too small! They didn't spread like I expected them to. I didn't care much, because they tasted so good, but my SO complained a bit. Oh well, can't please them all of the time.

Another great place to look for cookies, though, not necessarily lite, is the Food Tv website. I am jumping back and forth looking at recipes here and there. It is hard enough trying to find gifts for the holiday, now I am under pressure to make so many cookies, which to choose?? http://www.cookinglight.com/bbs/wink.gif!
