OK..I have to admit, it is very good, but how in the world do you slice it in 16 slices??? It just fell apart and collapsed when I tried to slice it thin. ANy suggestions???

Quick breads slice better the second day. They usually taste better on the second day, too. Also, you could try refrigerating it before you slice it. Hope this helps.

Forgot to mention that I never get 16 slices out of a loaf of quick bread though! http://www.cookinglight.com/bbs/biggrin.gif

I also questioned the wisdom of 16 slices, but is a nice thought, isnt it???? Lower fat and cal. Oh well http://www.cookinglight.com/bbs/smile.gif

Kim, I just thought of something else. If your dead set on getting 16 slices, just slice the loaf into 8 slices and then cut each one of those slices in half down the middle. Voila! My guess is that a lot of the loaf is gone by now though! http://www.cookinglight.com/bbs/wink.gif

I thought the recipe was wonderful also! I made them into muffins - I think I got 18 out of the recipe. I wrap them individually, stick them in the freezer, and they are quick to grab as I go out the door in the morning!
