View Full Version : Need T&T recipe for CRISP oatmeal cookies ASAP!

I have tried a number of recipes and can't find what I want, so I am appealing to ya'll. I want to make crisp oatmeal cookies. I did a search and only found a recipe for moist and chewy ones, or ones that there seems to be some confusion about the recipe (the CL one). I only want recipes that someone has actually tried. I have a file with some CL oatmeal cookies recipes, but don't have time to test any, as I need the cookies for my child's teachers early next week. (And in keeping with the previous post, I am also giving a Target gift certificate, but wanted to give something more personal and homemade too.) Thanks everybody!

I hadn't heard about confusion about the CL recipe...you mean December's Spicy Oatmeal Crisps? I made these without any problems and like them -- hubby REALLY likes them. One ingredient (black pepper) is optional -- I included it when I made them. Here's the recipe in case you do want to try them:

Spicy Oatmeal Crisps

3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon grated whole nutmeg
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon freshly ground black pepper (optional)
1 cup packed brown sugar
5 tablespoons butter or stick margarine, softened
1 teaspoon vanilla extract
1 large egg
1/2 cup regular oats
Cooking spray

Directions.
Pepper may sound like an odd ingredient for a cookie, but it complements the other spices well (although you can omit it if you prefer).

1. Preheat oven to 350 degrees.

2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients (flour through pepper) in a medium bowl. Beat sugar, butter, and vanilla in a large bowl with a mixer at medium speed until light and fluffy. Add egg; beat well. Stir in flour mixture and oats.

3. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350 degrees for 12 minutes or until crisp. Cool on pan 2 to 3 minutes or until firm. Remove cookies from pan; cool on wire racks. Yield: 2 dozen (serving size: 1 cookie).

Thanks Kworman, Beth R, thanks. There was some concern over the cakiness of some oatmeal cookie recipe that a number of people had tried lately, whether to use baking soda, etc. or not. I really like flatish crisp oatmeal cookies and have tried a number of recipes, including the ones on top of the Quaker Box, and they are all cakey and didn't want to run into that again. I like the idea of pepper actually, so I will try these. Do you think you could add raisens to these?

My theory is you can always add or delete raisins. You could also use currants or dried cranberries.
