I've never been a big sweet potato fan, but since I've had kids I've discovered just how good they are for you, and that I actually like them. I would like to make a sweet potato cassarole for Christmas Dinner, not one of the sticky ones with marshmellows, but maybe something a bit "chunkier". Does anyone have a good recipe?

Kim, did you get the sweet potato casserole with the praline topping at Thanksgiving? I will post it for you, we really enjoyed it. We roast sweet potatoes and serve them with butter. They are so sweet roasted that they don't need any sweetener.
1 cup all-purpose flour
2/3 cup packed brown sugar
1/4 cup chopped pecans, toasted
1/4 cup stick margarine, melted
1/2 teaspoon ground cinnamon
4 medium sweet potatoes, peeled and halved (about 21/2 pounds)
1/2 cup granulated sugar
11/2 teaspoons vanilla extract
1 large egg white
1 (5-ounce) can fat-free evaporated milk
Cooking spray
Preheat oven to 350`. Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside. Place potatoes in a Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender. Drain well; mash in a large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, and milk. Spoon into a 2-quart casserole coated with cooking spray; top with remaining streusel. Bake at 350` for 45 minutes.
Yield: 8 servings (serving size: 3/4 cup).

I highly recommend the sweet potato casserols! I also used to dislike sweet potatoes, but had only had them with marshmallows. I made the casserole with canned potatoes and it turned out good...a 40 oz can with a smaller can (total 60 oz)
I would also either cut back or cut out the white sugar in the recipe.

I too can highly recommend the above recipe. Made it at Thanksgiving and everyone loved it. I think it is worth the extra time to use fresh sweet potatoes. And if so, don't cut the sugar.

We found this to be a VERY SWEET dish. Unless you really like sweet I would cut down on the sugar and maybe the cinnamon depending upon your tastes.

I made this for Thanksgiving but I baked the seet potatoes instead of boiling them and didn't use the white sugar at all in the recipe. It was wonderful and I will be making it again for Christmas Eve dinner.

I hadn't had sweet potatoes for many years and thought I didn't like them, but I loved the sweet potato casserole with the praline topping. I actually would only cut down on the sugar slightly, if at all. I think the fact that this dish is more like a dessert is what made me like it. If it weren't so sweet, it might taste a little too much like sweet potatoes for me. http://www.cookinglight.com/bbs/smile.gif
However, if you're looking for something "chunky", this isn't it. It's very smooth; almost pudding-like (except the praline topping, of course).

Grace posted a very funny one that I made for Thansgiving. It was deliciious - had no nuts, just the sweet potatos. If you do a search i know its on one of the threads here.

I think the one Mary's referring to is Gail's Sweet Potato Casserole with Brandy, and it was indeed, amusing. My sister and mom were both laughing when they read her classic Gail-style directions.

Thanks you guys! I do appreciate all the tips and opinions. I've printed the Praline recipe, as well as Gail's recipe. I'm putting the two up for a vote on Christmas Eve and will let the majority win. (I'm so sick of decisions!).
