I have a recipe for Hot Fudge Sauce that calls for alkalized (Dutch process) cocoa powder. I couldn't find it in the supermarket. Can I use regular cocoa powder?

Yes, you can use regular baking cocoa---it won't be a rich in color or taste, but will still be good. You might try looking in your local health food store for the dutch processed cocoa--.

Hershey's makes a dutch-processed cocoa. It's packaged in the same shaped container as their regular cocoa except it has a silver label. You might check other grocery stores or ask yours to get it in for you.

I've used the Hershey's version, and it's quite good.
