I was a party a few weeks back and the hostess served a wonderful appetizer. It was brie cheese with apricot preserves (I think) and then it was baked in a bread that completely covered the cheese. Served warm this was awesome but she keeps stalling on giving me the recipe. Does anyone have anything similiar?

I just checked the inside of a package of Baby Brie and there is a recipe It calls for a 10-12" loaf of round crusty bread. Slice of top and hollow out inside, saving cut bread for serving. Remove and discard entire top rind of brie. Place brie inside of bread and add favorite fruit preserves (about 1/2 cup or so), replace top slice of bread and wrap entire loaf of bread in aluminum foil. Bake at 375º for 30 minutes. Serve with extra bread and crackers.

That sounds like it! Thanks so much. What brand of brie did you take that from so I can look for it?

Thanks again! I will let you know how it turns out.

Alouette is the brand and it is the 13.2 oz baby brie.

Thanks for the new idea! I was looking for a new appetizer recipe to bring on Christmas Eve and this looks great. It's perfect because it looks simple too, what with all the gift wrapping and child primping I'll have to do before we go as well. Thanks for a great recipe! Will definitely try this one.

If you really like brie, here's another recipe that was posted last month. I made it for an open house a couple of weeks ago and it got great reviews. Enjoy! http://www.cookinglight.com/bbs/Forum1/HTML/002379.html

I am having trouble visualizing this... When it is done, how do you begin to serve it? It sounds wonderful! Thanks

I just found a kit to make this appetizer in the brie cheese section but it includes raspberry instead of apricot preserves. I got it and plan to try it this weekend. Will let you know how it turns out.

I also have a very good and easy baked Brie receipe:

1 wheel or wedge of Brie chesse
1 (4 count) Pillsbury crescent rolls
1/4 cup apricot preserves
1 small package of slivered almonds
honey

Roll out crescent rolls to form a square. Place brie in center of square. Spread apricot preserves on top and sprinkle with 1/2 of the slivered almonds. Wrap dough around brie so that it is fully encased. Sprinkle top of dough with remaining almonds and spread on a layer of honey. Bake at 350 degrees for 15 min or until golden. Let sit 10min before serving with crackers or french baguette.
