HELP!! Several weeks ago someone posted a breakfast casserole recipe - quick and easy. I know I printed it of but I can't find it - please re-post or let me know which CL issue it was in.

I've just found out I'm needing something quick and easy for breakfast Christmas Eve morning

The SW breaffast cassrole form MIH issue is great. Also if you go to search and type in breakfst casserole, there are SEVERAL threads to try with bunches of recipes http://www.cookinglight.com/bbs/smile.gif

This is my favorite breakfast casserole. It is easy and different, I have gotten rave reviews on it.

French Toast Souffle CL April 2000 Page 104/105
10 c 1 inch cubed sturdy white bread about 16 1 ounce slices (Pepperidge Farm hearty White)
Cooking spray
1 8 ounce block 1/3 less fat cream cheese softened
8 large eggs
1 1/2 c 2 % milk
2/3 c half and half
1/2 c maple syrup
1/2 tsp vanilla extract
2 tab powdered sugar
1/4 c maple syrup
Place bread crumbs in a 13x9 baking dish coated with cooking spray. Beat cream cheese at med speed of mixer
until smooth. Add eggs 1 at a time mixing well after each addition. Add milk, half and half, 1/2 c maple syrup
and vanilla. MIx until smooth. POur cream cheese mixture over top of bread cover and refrigerate overnight
Preheat oven to 375
Remove baking dish from refrigerator, let stand in counter 30 minutes. Bake for 50 minutes or until set. Sprinkle
the souffle with powdered sugar and serve with maple syrup. 12 servings

I just want to second PJB's recommendation for the French Toast Souffle. It is very good and the fact that you make it the night before is a big time-saver.

I completely forgot about this recipe. The kids wanted something kind of sweet but I couldn't think of anything to make ahead of time. Yeah!!! Everyone is pleased.

I also have to say that the French toast souffle is one of my faviorites! I made it alot in the summer. I would bring it down the beach house in my pyrex portable. It's a great make-ahead receipe! In fact I'm still debating over making this or the SW cass. for Christmas morning.

This is a link to the Farmer's Casserole which is prepared the night before and then baked in the morning. It's excellent!
