How can you keep veal from getting tough in veal piccata? I cooked the salted slices in a minimum amout of olive oil, just briefly on each side,but in the end they were tough. Please advise.

SueH53, saw your query when I was searching for something else.
I always had trouble getting tender veal until I started buying veal chops instead of the other cuts of veal. I cut the meat off the bone, slice into two cutlets by cutting the meat horizontally. Bingo, some of the most tender, flavorful veal you will ever eat.
