This is not a CL recipe but is low-fat so I thought I would share with you all. My father-in-law gave it to me and told me that it won the Pace Picante Salsa $1M cookoff. It is absolutely delicious!


Name: Million Dollar Chicken Recipe
Serves: 4
Ingredients:
4 chicken breasts, boneless, skinless
1 clove garlic, minced
1/2 small onion, minced
1/4 tsp cumin
1 cup salsa
1 tsp cinnamon
1/2 cup raisins

Instructions:

Brown chicken in oil about 5 min. Remove from heat. Saute onion and garlic, add the rest of ingredients and simmer 15 to 20 min. Serve with rice.

I have made this before. I found it in a cookbook titled The Best Recipes 1999 (or something like that). I substituted currants for the raisins (what *is* the difference, by the way?) and added some chipotles and served on couscous. Very good and very easy.

Fresh currants are a small round fruit (berry, I think). Dried, they are similar to raisins, but smaller and a slightly peppery or spicy flavor. Raisins, made from grapes, have a milder, sweeter flavor and are larger. I interchange them in baking.
