I am looking for a Spanish Rice recipe. Who has a good one?

Also, who has made the B,lack Bean Burrito Bake?

Is Spanish Rice the same as the rice you get in Mexican restaurants? I have directions for that from my Hispanic neighbor if you want them. It's very good.

Here it is, Leisa. When I pulled it out of my recipe box I realized it IS titled SPANISH RICE.

Spanish Rice

Pour a small puddle of olive oil in skillet. Add 1c. uncooked rice and stir over low-medium heat until golden brown (10 - 15 minutes). Add 2&1/4 - 2&1/2 c. water, 2 cubes chicken bouillon, 3/4 of an 8-oz can tomato sauce and 1/4 c. finely chopped onion. Bring to a boil, then simmer with lid slighltly ajar until done. (15-20 minutes).

Enjoy!

Kathy - I am SO glad you posted this - thank you! I have been looking for a fairly quick and uninvolved spanish rice recipe and this looks like exactly what I was wanting. Thank you for sharing, and thank your neighbor for me too! :D
