... please post the ingredients for the "Margarita Shrimp Salad" (and the dressing) in the spring issue? I'm making it for dinner tonight, but forgot the magazine at home and want to make sure I don't need to stop for groceries.

Margarita Shrimp Salad

1 pound medium shrimp (about 30 per pound), peeled
and deveined
1/4 cup tequila
2 teaspoons freshly grated orange zest
1 teaspoon freshly grated lime zest
1/2 teaspoon salt
1/4 cup thinly slivered red onion
1/2 cup Creamy Lime-Chile Dressing (see recipe)
4 cups washed, dried, and torn romaine lettuce
2 medium endices, cored and torn into pieces (2
cups)
1 orange, peeled and cut into segments
2 ripe Hass avocados, peeled, pitted and cut
into 1/2-inch cubes
1 tablespoon fresh lime juice
1 tablespoon olive oil
lime wedges
Toss shrimp, tequila, orange zest, lime zest and salt in a medium bowl. Cover and marinate in the refrigerator for 10 minutes, stirring occasionally. Place onion in a small bowl, cover with cold water and some ice; let stand for 10 minutes, or until ready to use.
Meanwhile, make Creamy Lime-Chile Dressing.
Toss romaine, endive, orange segments and onion in a large bowl. Add dressing and toss to coat. Divide among 4 plates. Toss avocado with lime juice and divide among the servings.
Drain the shrimp, reserving the marinade. Heat oil in a large skillet over medium-high heat. Add the shrimp and saute until pink and firm, 2 to 3 minutes. Divide among the salads. Add the reserved marinade to the skillet and bring to a boil, stirring; spoon over shrimp. Serve with lime wedges for squeezing.
about 2 cups each: 413 cal, 23g fat, 181mg chol, 18g carb, 27g pro, 8g fiber, 636mg sod.

Creamy Lime-Chile Dressing
6 T reduced-fat sour cream
3 T fresh lime juice
2 tsp minced seeded jalapeno or serrano pepper
1 tsp chili powder
1 tsp sugar
1/4 tsp salt
Whisk all ingredients in a small bowl. MAkes about 1/2 cup.
Ooo! PLease review this salad after you try it!

I would say you could maybe up the lime juice instead of adding tequila, or you could just leave out the tequila and have "Virgin Margarita Shrimp Salad". Then it would really just be shrimp salad with a lime-y dressing, which I'm sure would be just as tasty!

I'm eating this salad for dinner right now. I was actually going to post the recipe, but I see that Terrytx saved me the trouble! :) I really like this salad. It is fresh and flavorful. I am not a huge Tequila fan, but it tastes great in this. It felt like a lot of effort--chopping, segmenting, etc, but I think I'm just being lazy! I would definitely repeat this recipe.

editing to say that DH hated this salad. He said it was terrible and he couldn't eat it! I don't know what he hated about it--he was asleep when I left this a.m., so it wasn't much of a conversation. Fine with me--I'll eat it for dinner! :)

We made this salad for dinner last night to use up some leftovers from our Cinco de Mayo party. WOW!!! Both DH and I loved it, and that's saying a lot because DH is not what you would call a salad lover!!! :D The dressing was tangy and spicy, and the shrimp were so very flavorful. The oranges and avocados were just perfect together. Plus, I thought the salad came together quite quickly - less than 1/2 hour for sure!
I served the salad with leftover baked tortilla chips and guacamole plus fresh mangoes. MMMMMM! Very summery dinner!

I real big hit here. I thought it went together pretty easily, but then I used thawed already peeled and deveined shrimp from Sam's. Even the DD, who claims not to be a big shrimp fan, raved. Served it with Garlic bread.

After copying this recipe ages ago, I finally made it. Thanks so much for posting this Terry, it was great! My husband who is not a big shrimp fan liked it a lot. A keeper here!

Oh, thanks for the reminder -- I had forgotten about this recipe! It would be good as a "dreaming of the summer" meal as we are all bundled up these chilly days! Question: I've never seen a recipe call soak onion in ice water -- what does it do?

I'm not completely sure what the soaking in ice water did... bit I think it made the onion really crisp. It was really good. I loved the shrimp, the whole bit. These are flavors I could eat every day!

Soaking raw onion in ice water takes some of that raw-oniony bite out and makes the onion slices more mellow. I soak my onions a lot for salads, because I don't really love raw onion in quantity.
