View Full Version : Mocha Coffee Cake recipe to share

I made this last night and thought it was great. It's from Divine Indulgences by the baking goddess, Rose Reisman. I recommend this to anyone who needs a low-fat pick-me-up.
Mocha Coffee Cake
TOPPING
1/2 cup packed brown sugar
3 tbsp semi-sweet chocolate chips
4 tsp cocoa powder
CAKE
1 1/4 cup sugar
1/3 veg oil
1/3 cup brewed coffee
1 egg
2 egg whites
1 tsp vanilla
1 1/4 cup all-purpose flour
1/3 cup cocoa powder
1 1/2 tsp baking powder
1/2 baking soda
2/3 cup low-fat sour cream
Preheat oven to 350 degrees.
In a small bowl, mix together ingredients for topping and set aside. In large bowl, whisk together sugar, oil, coffee, egg, egg whites and vanilla. In another bowl, mix together flour, cocoa, baking powder and baking soda. Stir dry ingredients into the coffee mixture, alternating dry ingredients with the sour cream. Pour batter into a prepared pan. Bake for 30 to 35 minutes.
NOTES: the book says to use a 9 inch square pan. I found this recipe made a lot of batter so you might need a 13 x 9 pan. I made mine into muffins and made 17 muffins. The topping is quite tasty, and the texture of the cake is quite moist.

Hey, I've made this. Personally, although good, I don't think it resembles a coffee cake, more like a snack cake. What would say foodfiend?

what is the difference between a snack cake and a coffee cake? to me, they are pretty much the same thing.

Perhaps snack cake is the wrong term. From what I remember, it was very cake like. I imagine coffeecakes to be more dense, whereas this was very airy. But, bear in mind, I'm not a baker, and my results for the coffeecake could entirely be due to my inexperience.
Another note also, I didn't detect much coffee in this either.

I thought coffee cake referred to the cake you have with your coffee. Think I read that somwhere.
YP -- did you use a 9 inch square pan or a 13 x 9?

It may be regional, but I think non-coffee drinkers like to call them snack cakes. I call them coffee cakes whether I am having coffee with them or not.;) :D
BTW, the coffee cake looks great! I may make it tomorrow :D

Thanks! This is coming out of the oven now and it smells great (and the batter was yummy too). I'm always looking for ways to use up leftovers from the morning pot of coffee so this will become a regular!

I finally got around to making this yesterday - it was delicious!
Instead of the semi-sweet choc. chips, I had a bag of Hershey kisses (the baking ones) open so I used those instead. DH loved it too - he had two pieces off the bat.
Oh, I used my Pampered chef square pan and all the batter fit in with room. I love that pan because I never have to grease it either.

Am I missing something or does the recipe not say what to do with the topping? Okay even I know it goes on top! But sometimes you put the topping on only for the last few minutes. I put it on right away...just wondering if I missed something!:confused:

Now Maureen, the instructions are there, you just don't see it :D :D
Seriously, it's not there, and I noticed that as well as I was making it. I put it on prior to baking. I I meant to mention it when I posted my review. However, a day later, I forgot all about it. :rolleyes: :o

I made this for choir last night with the Applesauce Snack Cake. My dad loved this one. I figured out 5.5 WW points if the cake was cut into 12 pieces. Because it has a good chocolate flavor, this size was fine. My only complaint was that it took longer to bake and that I think the topping could be cut down. Some of it just poured right off when I cut it into pieces. Still, I would repeat this, amybe trying to add more coffee instead of oil and/or using applesauce for the oil to cut down on the points even more.

Whoops! Forgot to write that you add the topping before you begin baking. I also agree, you can easily cut down the amount of topping for this cake. But it's still quite tasty and still a favorite.
