Holiday Greetings To All!!!

I am interested in trying a Biscotti (day 18 Cookie Countdown) which calles for 2 T
Crystallized Ginger. Can someone explain what that is to me? I am bound and determined to do some baking next week and want to try something other than the usual holiday cookies.

Toots,

Crystallized ginger is really just like dried fruit, but it's the ginger root...it's sliced, dried ginger with sugar crystals all over it. I think it's so good that I ate the remaining bag I had left over from a couple recipes all by itself!

I had to find mine at Whole Foods (a natural food store -- you might actually have one) but I'm sure any large, well-stocked grocery store might have it, too, and it should be located with the dried fruit. Hope you find it!

I've also seen it in the aisle with spices and baking ingredients. When in doubt, ask someone in the know at your market.

I used it this holiday for that wonderful pinot noir cranberry sauce and the ginger choc. chip biscotti. My two year old, who is almost always on the counter "helping" was eating crystallized ginger by the hunk. She loves ginger at sushi, BUT THERE IT IS FREE!
