Have any of you guys ever brined a turkey? I understand it is fabulous - however I cannot find a recipe. I welome your experiences / recipes!! Thanks again!!

I have never brined a turkey before either, but Cook's Illustrated magazine had some recipes to try with brining a few months ago. I realize I am not being extremely helpful, because I can't even tell you what month it was!

While I have never brined a turkey, Sara Moulton on Food Network said that she doesn't care for brining because it changes the texture of the meat. She said it makes the meat more similar to a salami. If you do brine a bird, I would be very interested to hear what you think of it. Good luck!

I actually brined my turkey this past thanksgiving and had several people say it was the best turkey they ever had. The link below is how I did it.

Thanks you so much to Linda O and all of you who responded! I tried the Cooks Illustrated method of brining my turkey - it was teh best turkey I have ever made. I had a 25 lb free range bird - it cooked in 4 hours at 325!! I assume the brining had something to do with this - however i dont' really know. Regardless it was moist and incredible! Everyone raved.

I brined my first turkey for Christmas dinner!! WONDERFUL!!!! Everyone commented on how tasty and how moist the turkey was. I got my recipe from the Good Eats show on The Food Network (www.foodtv.com). To find the recipe, go to the Good Eats section of their website, and you should see a link just above the upcoming shows that says something about "roasted turkey - yes, the one with the brine". Even though the bird was swimming in a very salty mixture for 6-8 hours, the cooked turkey was NOT salty at all. PS....this is only the second turkey I've ever roasted. It was really easy....and just required a few items (got several through Penzey's).
