View Full Version : ISO: citrus salsa from Moosewood Cooks for a Crowd

I know this is a very specific request and may not be out there but:

I lived for a while with someone who had the cookbook Moosewood Cooks for a Crowd. In it was a recipe for Black Bean & Sweet Potato Burritos and Citrus Salsa. Moosewood Low-fat Favorites has a variation of the burritos, which I have (just bought it for myself for Christmas http://www.cookinglight.com/bbs/smile.gif ) but it doesn't have a version of the citrus salsa. I have searched and found some old threads that have citrus salsas, but not like the one I'm looking for. It has red peppers, oranges and pineapples (although you can also make a variation w/o pineapple, which is what I usually did). Anyway, I'm in hope that there is someone out there who might have this specific recipe. Anyone? Beuller? http://www.cookinglight.com/bbs/wink.gif

ChefChris: Thanks so much! I have Moosewood Cooks at Home and I never thought to even check it (duh!). I actually came upon "Cooks for a Crowd" while I was Christmas shopping for a friend of mine and I wrote the recipe down right there in the store. I felt sort of silly but sometimes if I'm craving something I can get a bit obsessive. I can't wait to make the burritos and salsa this weekend. YUM! Thanks again for the post!

Well I had to search for you because of the Bueller comment, very funny!

I don't have Moosewood cooks for a crowd, but I do have Moosewood cooks at home, here is a tomato-orange salsa that maybe you can adjust to make it more like you remember. The other thought would be to go to a bookstore and look up the recipe, sometimes just looking at a recipe can be enough to be able to improvise. Anyway here you go...

Tomsto-Orange Salsa

Makes 2 1/2 cups
prep:15 min

3 ripe tomatoes, diced
4 scallions, chopped
1/2 to 1 fresh green chile, seeded and minced or 1/4 tsp of cayenne
2 tsp freshly grated orange peel
1 orange, sectioned and seeded, each section cut in half
2 T fresh lemon juice
1/2 tsp ground cumin
1/2 tsp ground coriander
salt to taste

Combine all of the ingredients in a bowl, and let sit for 10 to 15 minutes to allow the flavors to belnd. Covered and refrigerated, this salsa will keep for 2 to 3 days.

By the way I also checked all of my Mollie Katzens just in case she had one, but no luck
