As I've said before, my parents are vegetarian, so we usually have lasagna for Christmas dinner. My mother doesn't eat onions or garlic either--I'm not really sure how she survives--so her lasagna is good, but generally flavorless. This year, I decided that I was going to make the best lasagna possible for my new Italian husband, while still staying in my mom's dietary bounaries.
While I love good Italian sauce, I have never attempted to make a real "sauce". But after reading your posts Phoebe, I decided I could try. I armed myself with diced tomatoes, fresh rosemary, basil and parsley and beautiful Greek Olive oil--along with sage, salt, pepper, oregano and combined it all in a big pot. And I cooked it--for hours, stirring and adding water, until my sauce turned a deep mahagony red. I layered it in my lasagna with eggplant, various cheeses and noodles and smothered the entire thing in mozzarella cheese (part skim--shhh!).
At Christmas dinner, I waited while everyone took a bite, holding my breath. I expected my parents to love it--but I felt the best when my husband turned to me and said "this sauce would make my mother proud!" http://www.cookinglight.com/bbs/biggrin.gif Thanks Phoebe, for helping to make my Christmas a huge success!
