View Full Version : Maple Oatmeal Muffins - yummy!

I made these yesterday and they were really good. I'd add raisins or craisins next time, but I made them as is this first time.
MAPLE OATMEAL MUFFINS
These tempting, reduced-fat muffins are a nice way to get started in the morning.
2 cups unbleached all purpose flour
1 cup quick-cooking oats
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup low-fat buttermilk
3/4 cup unsweetened applesauce
1/2 cup pure maple syrup
1/2 cup packed golden brown sugar
1/4 cup vegetable oil
1 large egg
2 teaspoons vanilla extract
Preheat oven to 400°F. Line twelve 1/3-cup muffin cups with paper liners. Combine first 6 ingredients in large bowl and stir to blend. Whisk buttermilk, applesauce, maple syrup, brown sugar, vegetable oil, egg and vanilla in medium bowl until well blended. Add to dry ingredients and stir just to incorporate (do not overmix).
Divide batter equally among muffin cups (batter will reach top of cups). Bake until muffin tops are golden brown and tester inserted into center of muffins comes out clean, about 28 minutes. Transfer to rack and cool.
Makes 12.
Per serving: calories, 231; fat, 6 g; cholesterol, 18 mg; sodium, 276 mg

Thanks funnybone. I'll try these soon, I've been wanting something to go along with my tea. I think I'll sub 1/2 regular flour for wheat flour for the fibre boost.

I made these and thought they were great. I accidentally left out the brown sugar, and it was still tasty.

These sound delicious and I'm ready to jump in the kitchen and make em pronto! The only thing is- I don't have any applesauce...do you think they'd still turn out if I sub butter for the applesauce(if so, how much?)? Or could I just leave out the applesauce maybe? What do you all think?

Personally, I'd wait until I had some applesauce. Do you have any fresh apples you could grind down or shred? Or maybe some smashed banana? I definitely wouldn't omit it without replacing it with something similar.

The recipe looks wonderful. We always go a little muffin crazy here in the winter, and now we have a brand new one to try! I will definitely use half whole wheat flour, but other than that, I doubt that I'll "tweak" it at all! ;)

These are my all-time favorite muffins--I've been making them for years (the recipe is from the Epicurious website), and you'd never know they were lowfat. To give them that gourmet bakery look, sprinkle some oats on top before baking.

These look so good! I'll be trying them later today. We also eat tons of muffins in the winter for desserts, and then in the summer we switch back to the ice cream maker for sorbets and frozen yogurt.
I buy my applesauce in the large jars and then freeze it in 1/2 cup portions (in little baggies), so that I always have applesauce ready to make muffins.

Oh I could just kick myself! So I finally get to the store, got the applesauce, get to bakin', and I went and left out the brown sugar too! When I realized it, it was too late. Gosh darnit!!!!!:(

Well, I gotta say - they didn't taste very good to me - kinda cardboardy. I was so bummed when I realized I left out the sugar. I ended up pitching em all. :( I know foodfiend also forgot the brown sugar and thought they were tasty anyway though.
You know what else? I'm ashamed to say this....but I used fake maple syrup :eek: (gasp)! It's all I had because I fix DH waffles once in a blue moon. I would definitely recommend using the real syrup because I could barely taste the maple in my (unsweetened) muffins.:rolleyes:
But I must say, these are some pretty muffins! They had nice, high golden crowns. And they smelled divine!!!!
Kristin, would love to hear how they go for you if you make em!
Pam, I loved your idea of freezing 1/2 cup applesauce portions in the freezer! I did just that! Thank you!

I hear ya - my "recipes to try" pile is outa control! This week I really wanted to try some new ones. It sure is a bummer when a recipe you're excited about doesn't turn out like you'd hoped. Oh well. If at first you don't succeed....(pitch the first batch!)...and try and try again! :D

These were very tasty. My fiance and I enjoyed them thoroughly. I subbed 1/2 WW flour, and added raisins per Funnybone's suggestion. I also used old fashioned oatmeal as it was what I had....
Yum. Definitely going in the keeper file.

So if you use regular old fashioned oatmeal, do you have to change anything? The amount used, time cooked?

I didn't (change anything because of the old fashioned oatmeal). In fact, I found mine to be done at 23 minutes which was even less time. They perhaps had a bit more texture, but I can live with that.
Can't rave enough about these muffins. My fiance and I both looked forward to them this morning... he even stopped and randomly said last night, "You know those muffins were REALLY good." And they don't taste light.

Glad someone mentioned REGULAR OATMEAL! That is all I buy. I get it in Whole Foods from the bulk barrels for .39 cents per pound! Sure beats the price they charge in the supers!

These sound great, and I'm pretty tired of only baking citrus stuff. Think I'll make these today. I will probably use old fashioned oats, as I like them better in baked goods than the quick kind. Will also add my jumbo raisins from TJ's. Will let you all know how they turn out. Thanks for the recipe, Funnybone!

I made these last night, substituting oat bran for 1/2 of the flour, and adding dried cranberries. I also made them in my Texas muffin tin, instead of regular size (made 6). These are WONDERFUL! And the smell in the house while they baked was heavenly!! Thank you so much for this recipe. These are going to be made regularly!

Just made these muffins with a few changes: 1 1/2 cups AP flour and 1/2 cup WWP flour, used drained applesauce, and 1/8 cup oil, used 1 teaspoon vanilla and 1 teaspoon maple extract, and added jumbo raisins. Also sprinkled with oatmeal on top of muffins before baking. Made 17 rather large muffins. My cooking time was 20 minutes.
The muffins are very moist and flavorful. I think they would be killer with mini chocolate chips and maybe even some nuts. All in all, a good recipe; thanks for sharing! :)
