View Full Version : Need advice: Sides with Pork Tenderloin ???

I am making a dinner for my Dad-in-law for his 55th birthday this weekend and would like some recommendations on sides to be prepared with Pork Tenderloin or any recent success's with this main dish!

I don't know if this will help, but when I make pork tenderloin, I usually make mashed potatoes and gravy. I cut slits in the tenderloin and put garlic cloves in the slits before roasting. I will also make a green leafy vegetable, like spinach sauteed with some olive oil and garlic or broccoli to go along with it. Not too fancy, I know, but they seem to go together well. I'm sure that others will have much more elaborate ideas than I do. However, my husband loves it when I make mashed potatoes and gravy, so I get plenty of compliments!

I bet roasted potatoes would go good, too- maybe some olive oil, seasoning and some rosemary?

Thanks MrsReber! I will do mashed potatoes and also put the garlic into the meat.
I think my Dad-in-law will love this!

Hi. How are you making the tenderloin? I would depending on the pork recipe start with a soup (butternut or some of your dad's favorite soups), then a basket of bread, a salad maybe try a spinach with mandarin sections and a vinaigrette, I would make a rice maybe a pilaf rice, some vegetable (asparagus or brussel sprouts mix with baby carrots. A cabernet wine would be nice and a grand finale birthday cake.

Vanessa...great suggestions. I need to find the salad recipe for sure. I am not big on fruit but I think it sounds good anyway.

I had alot of apples on hand so for Christmas I made Sauteed Apples from CL, March, 2000. They were very easy and tasty as well. Since Pork Chops and Applesause goes together, I bet this would be good with Pork Tenderloin. Anyway, in case you are interested, here is the recipe:

3 tablespoons butter or stick margarine
6 cups peeled, sliced Granny Smith apples (about 2 lbs)
1/2 cup packed brown sugar
1/8 teaspoon ground cinnamon (I used more!)

Melt butter in a large skillet over medium- high heat. Add apples; saute 6 minutes or until apple is just tender. Stir in sugar and cinnamon. Cook 1 minute or until sugar melts (I cooked longer so the 'glaze' became syrupy..is that a word?!)

I wanted to add raisons but didn't have any so I added Cranberry Fruitlings (dried cranberries) which are like Craisons. You could also dice the apples and make more of a compote. Enjoy!

This is probably too late but I love the Pecan Crusted Pork Tenderloin with Red Onion Marmalade and Sweet Potatoes - I belive its from dec (or was it Nov that had all the pecan recipes - which ever one has the tassies on the cover). I am not a big sweet potato fan but love them prepared this way (they're not as sweet) and the onion is wonderful!

Mandarin Orange Tossed Salad

Recipe By :
Serving Size : 0 Preparation Time :0:00
Categories : Vegetable Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cans mandarin oranges -- save juice

Dressing:
1/4 cup olive or vegetable oil
1/4 cup white wine vinegar
1/4 cup or so of reserved mandarin juice
1 t. or so of sugar
1/4 t. salt
fresh ground pepper to taste

Salad:
8 cups torn leaf and/or romaine lettuce, approx.
3 to 4 green onions -- sliced
3 celery stalks -- sliced
1 carrot -- shredded or chopped(optional)
1/2 red onion -- sliced (optional)
1 cucumber -- sliced (optional)

Topping:
1/2 cup sliced almonds
3 T. or so of sugar

Drain oranges and reserve 1/4 cup of juice. Combine with oil, vinegar, sugar and spices in a jar with tight fitting lid. Refrigerate.

Combine salad ingredients in large bowl.

Combine almonds and sugar in skillet and toast over med. or med-low heat. Stir constantly until sugar melts and coats almonds. Cool on wax paper or foil.

Serve dressing and almonds over salad. (Serve immediately once dressing is poured over the salad, or let each person pour their own dressing and do their own almonds. Double the dressing ingredients, if desired.)

Serving Ideas : This could easily be turned into a main dish salad by adding grilled or broiled chicken or turkey.
